1 tablespoon oil
2 teaspoons curry powder
1 (16 oz) jar salsa
1/2 cup sliced green olives
1/4 cup golden raisins
1/4 cup honey
2 pounds chicken breast, cooked
In a skillet heat oil over medium heat. Stir in the curry powder. Cook about 1 minute
Stir in the remaining ingredients and turn to coat.
Cover and cook about 5-6 minutes until bubbly and heated through.
NOTE: Make sure to use a mild salsa. It can get a bit spicy.
