Thai Chicken Stew

This is a recipe that my mother-in-law gave me. It is actually supposed to be for pork stew, but my family does not eat pork, so I have decided to substitute chicken. If you use pork it is really good and looks like pulled pork. This is a family favorite and easy to make because it uses a crock pot.

Thai Chicken Stew

2 lbs of chicken cut up

2 cups of sliced red bell peppers (I usually omit this because I don't have it on hand)

1/4 cup teriyaki or soy sauce

2 Tablespoons rice or whie wine vinegar

1 teaspoon crushed red pepper

2 garlic cloves, minced

1/4 cup creamy peanut butter (I use all natural)

6 cups hot cooked rice (I use brown)

1/2 cup chopped green onion

2 Tablespoons chopped peanuts (really for garnish, but gives a nice crunch)

1.)Place the first 5 ingredients in a crock pot (chicken through garlic). Turn on low and cook for 8 hours. Remove chicken and coursely chop. Add peanut butter to liquid in crock pot and stir. Stir in the chicken.

2.)Spoon chicken over hot, cooked rice in bowls and top with onions and peanuts. If you like you can put a lime wedge on each bowl for each person to squeeze fresh lime juice on top of their stew.

There you have it, a frugal, quick, yet nutritious meal. You can always add a side of veggies.
