Fatousch (Greek Salad)

Lemon Dressing

1/4 c oil
2 Tablespoons lemon juice
1/2 teaspoon sugar
1 1/2 teaspoons Dijon mustard
1/4 teaspoon salt
1/8 teaspoon pepper


7 oz spinach torn into bite sized pieces (5 cups)
1 head Boston lettuce (4 cups) I plan to use romaine
1 4oz package feta
4 medium green onions, sliced
24 pitted olives
3 medium tomatoes, cut into wedges
1 medium cucumber, sliced

In tightly covered container, shake all dressing ingredients.

In large bowl, toss salad ingredients and dressing, serve immediately
